Job Description:

We are seeking a skilled Southeast Asian-style chef to join our culinary team. The successful candidate will specialise in preparing authentic halal Southeast Asian cuisine, drawing inspiration from street food across the diverse regions of Southeast Asia. This role involves menu planning, food preparation, cooking, and overseeing the storage and service of food, while ensuring adherence to halal standards and regulations.

Responsibilities:

  • Create and prepare authentic Southeast Asian dishes following halal requirements.
  • Design and plan innovative menus featuring street food influences from across Southeast Asia.
  • Ensure all food prepared is halal-compliant in both ingredients and preparation methods.
  • Oversee food storage, preparation, and service to maintain quality and authenticity.
  • Train and supervise kitchen staff on Southeast Asian cooking techniques and halal requirements.
  • Manage inventory and ordering of speciality ingredients needed for Southeast Asian cuisine.
  • Maintain kitchen hygiene and food safety standards in compliance with regulations.
  • Collaborate with management to develop seasonal menu items and special offerings.
  • Monitor food costs and minimise waste while maintaining high-quality standards.

Qualifications:

  • RQF Level 3 qualification or higher in culinary arts or equivalent professional experience.
  • Proven experience in preparing and cooking Southeast Asian cuisine.
  • Comprehensive knowledge of halal food requirements, including permissible ingredients and food handling practices to prevent cross-contamination.
  • Familiarity with street food styles from various Southeast Asian countries (Thailand, Malaysia, Indonesia, Vietnam, Philippines, etc.).
  • Strong understanding of spices, herbs, and cooking techniques specific to Southeast Asian cuisine.
  • Experience in menu planning and kitchen management.
  • Excellent organisational and time management skills.
  • Ability to work under pressure in a fast-paced environment.
  • Food hygiene certification.

Preferred Qualifications:

  • Knowledge of halal certification standards and processes.
  • Experience working in a halal-certified kitchen or restaurant.
  • Additional culinary training in specific Southeast Asian regional cuisines.
  • Language skills relevant to Southeast Asian countries (such as Malay, Thai, Indonesian, or Vietnamese).

Conditions:

  • Early morning starts are required, with typical shifts from 6 am until 2 pm.
  • Work hours may vary based on business needs.
  • Standing for extended periods in a kitchen environment.
  • Working with kitchen equipment and hot cooking surfaces.
  • Fast-paced work environment requiring attention to detail.
